Albert y Simon Benisty dan una especial importancia a la evolución y siempre se fueron adaptando a esas tendencias y cambios, implícitos en el más alto y suculento mundo que convirtieron en el suyo propio al hacer realidad Albert&Simón, primero en Nueva Atalaya-Estepona y desde Mayo de 2000, en Nueva Alcántara de San Pedro - Marbella (Málaga-España). Junto a su familia, ‘La Parada’ de Marbella, fue definitiva para la trayectoria profesional de ambos.
Albert and Simon Benisty give special importance to evolution and have always adapted themselves to new trends and changes that occur at the top level of the most succulent world that they have made their own by converting Albert&Simoninto a reality, first in Nueva Atalaya-Estepona and since May of 2000, in Nueva Alcantara - San Pedro -Marbella. Working together with their family, “La Parada” Restaurant in Marbella, was decisive in the professional career of both.

Albert sabía que quería ser Cocinero desde los 15 años y su formación inicial fue realizada en Suecia. Ante las preferencias gastronómicas dominantes. La Cocina Neoclásica Creativa de este gran Autor se instala en su mítico Restaurante ‘Le Soufflé’ de Estepona y desde donde Albert brilló aún más, en 1987, con una de las primeras Estrellas Michelín otorgadas en Andalucía. Aquella Sala empezó a dirigirla Simón que no ha vuelto a separarse de su hermano y en el 2007, es reconocido con Mérito Sobresaliente en el WSET in Wines and Spirits y además es miembro de la As.de Sumilleres de España, Andalucía-Costa del Sol.
From the age of 15, Albert knew he wanted to be a Chef, and his first training took place in Sweden.He returned when certain restaurants in Marbella began to be well-known in the 80’s, including the one that was still run by his parents, “Casa David”, which became popular on the basis of its International Cuisine, and continued to be a leading restaurant for diners from all over the world.In spite of the predominant gastronomic tendencies, the Creative Neoclassical Cuisine of this great Chef was established in their legendary restaurant “Le Soufflé” in Estepona, where in 1987 Albert’s star glowed even brighter when he obtained one of the two first Michelin Stars to be awarded on the Costa del Sol.The dining room began to be managed by Simon, who since then has not separated from his brother and, in 2007, achieved the level of Distinction in the WSET in Wines and Spirits and furthermore he is a member of the Top Sommeliers of Spain, Andalusia, Costa del Sol.

Hemos de tener en cuenta que ‘tras unhombre con éxito siempre hay una gran mujer’ que se convierten en tres para estos dos Restauradores: Juani y Deborah, esposa e hija de Albert, en Cocina y Paqui, esposa de Simón, cuya hija se incorporará al Staff de Alber&Simon muy pronto.
